Broth Ingredients
- 4 lb bone in, skin-on chicken thighs
- 1 onion, halved
- 2 Tbsp ginger
- 2 tsp table salt
- 1.5 tsp sugar
- 1 Tbsp coriander seeds
- 1 cinnamon stick
- 1 star anise pod
- 2 whole cloves
- 1/4 cup fish sauce
Pho Ingredients
- 12 oz dried rice noodles
- 1/2 small onion, thinly sliced
- 2 scallions, thinly sliced
- Bean Sprouts
- Fresh cilantro leaves and stems
- Fresh Thai basil leaves
- Lime wedges
- Serrano chiles, thinly sliced
- Hoisin sauce
- Sriaracha
Instructions
- Place chicken thighs in large Dutch Oven (4-5qt). Cover with 12 cups of water.
- Add all of the broth ingredients except for fish sauce to the pot.
- Set stove to high and bring to boil. Once boiling, immediately reduce heat to low. Cover with lid and let cook, untouched, for 90 minutes.
- Transfer chicken to a pan and set aside to briefly cool.
- Strain the broth through a fine-mesh strainer into a large bowl. If strainer is lined with cheesecloth (optional), you’ll get a super clean broth.
- Rinse the pot you cooked the chicken in with warm water to remove any left behind grit and grime from the cooking process.
- Pour strained broth back into the pot. Stir in the fish sauce. Put lid back on and set to low heat.
- Soak pho noodles in water for 20 minutes.
- While noodles are soaking, prepare chicken for serving. Remove skin from the thighs and pull meat off the bone.
- Bring 8 cups of water to a boil in a separate pot for the noodles. While this comes to a boil, drain the noodles.
- Turn heat on the covered broth pot to medium. Keep covered.
- Place about ½ cup of chicken in each serving bowl. Add desired amount of onions and scallions.
- Once noodle water is at a full boil, carefully drop in the noodles and cook for one minute. Drain the noodles and then immediately portion out into each serving bowl. Ladle in desired amount of broth. If you let the drained noodles sit too long before covering with broth, they’ll become sticky/gummy, which we don’t want.
- Customize each bowl to individual tastes with the various garnishings.
