Ingredients
  

  • 12-18 corn tortillas, warmed
  • 1 avocado, halved, pitted, and cut into 1/2" pieces
  • 2 oz Cotija cheese, crumbled
  • 6 scallions, minced
  • Fresh cilantro, minced
  • Lime wedges

CHICKEN

  • 2 lbs boneless, skinless chicken thighs, trimmed
  • 2 tbsp vegetable oil
  • 1 onion, halved and sliced thin
  • 2 tbsp minced canned chipotle chile in adobo sauce
  • 1 tsp garlic powder
  • 1 tsp ground cumin
  • 1/4 tsp ground cinnamon
  • 14.5 oz canned fire-roasted diced tomatoes, drained
  • 1/2 tsp brown sugar
  • 1 tsp grated lime zest
  • 2 tbsp lime juice
